There was so much sap this week.
On Friday at 4 pm, we started boiling the sap that was collected on Wednesday by the Junior Highers. Jen and I collected a little more on Friday afternoon. The fire died down overnight on Friday night. Then on Saturday we collected a lot more sap and kept the boil going all day and into the night. We had great helpers to collect sap and haul wood. Thanks to LCS families and staff and friends who came out in succession. The sap was left overnight again and the fire died down, but at 7 this morning, Dale was out there stoking it up again. We had hopes of finishing the syrup by noon today, but we actually finished around 6 pm and finished cleaning up as the sun was setting. It was one of the longest continuous boils that we have had and it resulted in 8 gallons of syrup.
Given that there is still plenty of snow in the woods, I think the buds will hold off at least for one more week. So we will plant to boil again next weekend, assuming it freezes at least one night this coming week.
